What you’ll need:
2-3 lbs Chicken wings
1/3 cup canola oil
¼ cup corn starch
¼ cup of your favourite poultry spice (recommended BK BBQ Old School Spice)
1.5 cups of your favourite wing sauce (commended Bow Valley BBQ Wing Sauce)
6-7 large Russet Potatoes
1/3 cup of Canola Oil
¼ cup of “steak” spice (recommended BK BBQ Pirate Blend)
What to do to make the wings:
In a large mixing dish add canola oil to the wings and mix in, then add corn starch and mix in the spice.
Put the spiced chicken in the fridge for about one hour.
Preheat grill to 275 °F
Place wings on a greased rack (this way they don’t stick to the grill and is easier clean up). Make sure they are covered in spice (you may need to add).
Put the wings in the smoker for about 1 hour
Take the wings off the grill – and deep fry in Canola Oil (temp 350 °F) 2-3 minutes in batches
Once you take them out of the fryer, put some wing BBQ sauce on them (about 1 cup) and place them back on the smoker for about 10 minutes.
Remove and add the rest of the BBQ sauce – and they are ready to enjoy!
What to do to make the fries:
Preheat grill to 300 ° F
Cut potatoes (no need to peel) into fries.
In a large mixing dish add Canola oil to the fries mix and then add spice
Put fires on parchment paper covered baking sheet and put them on the grill for about ½ hour.
Remove from smoker and deep fry in Canola Oil (temp 350 °F) for 2-3 minutes in batches
Once you take them out of the fryer they are ready to eat.
